Homemade sourdough ricotta gnocchi

Homemade sourdough ricotta gnocchi!

This is the easiest way to make gnocchi, it takes like 15 minutes!

Ingredients:
150 grams of flour
100 grams of active sourdough starter
200 grams of ricotta

Instructions:

- add flour to a clean surface and make a well in the middle
- add ricotta and sourdough starter
- combine with a bench scraper
- start kneading until you can push into the dough and it retains its shape
- cut off small sections of the dough and roll until you have a section with an inch or two in thickness
- use a bench scraper to cut Into pieces
- use a fork to shape your pasta
- sprinkle in semolina flour to prevent the pasta sticking together
- boil in salted water until pasta floats
