Ingredients:
3-4 cloves of minced garlic
4 Tablespoons of diced onions
3-4 pieces of celery - chopped
3-4 large carrots - chopped
2 russet potatoes - chopped
2 cups of rotisserie chicken
6 cups of chicken stock or bone broth
1 1/2 cups of heavy cream
Instructions:
Add your garlic and onions to your oiled pan and sauté until browning starts and the onions start to get translucent
Add in your celery and carrots and continue to cook for a few minutes
Add your potatoes, chicken and chicken stock and bring to a simmer.
Put the lid on and simmer until the veggies become soft, stirring occasionally
Add you heavy cream and cook with the lid on for another 15 minutes. Add salt and pepper to taste
Serve and enjoy!
